Once nearly extinct, today the Mora Romagnola stands as an emblem of Emilia-Romagna's gastronomic biodiversity. An ancient swine breed native to the Romagna countryside, it numbered around 22,000 animals in 1949, yet by the early 1990s, fewer than 15 remained. Thanks to the tenacity of dedicated small-scale farmers, this heritage breed was saved and returned to its ancestral lands.

Mortadella Mora Mora was born from this tale of preservation and rebirth. Crafted exclusively from Mora Romagnola pork, it is distinguished by the exceptional quality of its raw ingredients—naturally rich and succulent—giving it a full-bodied depth of flavor and a truly unique character.

Artisanally crafted and produced in strictly limited quantities, this mortadella embodies biodiversity, authentic terroir, and timeless Romagna tradition.

Best enjoyed sliced paper-thin, it pairs wonderfully with Parmigiano Reggiano, aged cheeses, rustic crusty bread, and fresh white wines, young reds, or rosé, offering an authentic taste of genuine Emilian heritage.

Philosophy

Our artisan workshop selects only fresh, prime cuts from 100% Italian pigs, sourced primarily from the Bologna countryside and raised, in part, free-range.

To ensure truly authentic and wholesome products, our artisans nurture a direct relationship with farmers, built on mutual trust and transparency. They visit the farms in person, closely verifying animal welfare, feed, and natural living conditions.

The slow cooking process is another vital step: lasting between 24 and 28 hours at low temperatures, it gently coaxes out the pure aromas and genuine flavors of the meat.

Finally, our recipe strictly excludes flours, milk and dairy derivatives, lactose, artificial colorings, and added polyphosphates. We never use pork rinds, tripe, offal, ice, or emulsified ice—resulting in a mortadella of tender, melt-in-the-mouth texture and unmistakably authentic taste.
