Parmigiano Reggiano PDO – Vacche Rosse (Red Cow) – 30 Months – Small artisan farm

Long before Parmigiano Reggiano became world-renowned, there were the Red Cows of the Reggiana Breed.

According to tradition, it was precisely their milk that was used by Benedictine monks over eight centuries ago, when one of history's most extraordinary cheeses was born in the abbeys between Reggio Emilia and Parma. For this reason, the Red Cows are still regarded today as the historic “mothers” of Parmigiano Reggiano.

During the twentieth century, this ancient breed nearly vanished, replaced by more productive cattle. Thanks to the dedication of a few Emilian farmers, it was saved from extinction, bringing back to our tables a rare, authentic Parmigiano Reggiano deeply rooted in its origins.

Today, Parmigiano Reggiano Vacche Rosse is crafted exclusively from the milk of the Reggiana breed and can only be released after at least 24 months of aging. The result is a cheese with a warm straw-yellow hue, a sweet and refined flavor, and an extraordinary aromatic complexity that tells the true story of Emilia.

To be enjoyed on its own or with a few drops of Traditional Balsamic Vinegar of Modena DOP, paired with Prosciutto di Parma, Culatello, and artisan Salame Contadino, or drizzled with honey alongside pears and walnuts. Sublime with a fine Lambrusco or a bold Emilian red wine, for a genuine taste of our land.

A unique milk, an unmistakable flavor

It is not merely a matter of breed, but of nature itself.

The milk from Red Cows of the Reggiana Breed is naturally rich in k-casein B, a specific protein variant that promotes superior cheesemaking and enables prolonged aging. It is this distinctive quality that lends Parmigiano Reggiano Vacche Rosse its extraordinary aromatic depth.

The result is a cheese of elegant and enduring flavor, graced with notes of melted butter, dried fruit, and hay, a crumbly texture, and an inviting sweetness that makes it truly singular.

Each wheel is aged for a minimum of 24 months, allowing time to awaken the full character of a rare and precious artisan treasure.

Choosing Parmigiano Reggiano Vacche Rosse means not only bringing culinary excellence to your table, but also helping safeguard a unique Emilian heritage for generations to come.

HISTORY – The Ancient Keepers of Parmigiano Reggiano

Before Parmigiano Reggiano became an emblem of Italian gastronomy, there were the Red Cows of the Reggiana Breed. It was from their milk that Benedictine monks, more than eight hundred years ago, crafted the cheese destined to conquer the world.

During the twentieth century, this prized breed came close to extinction, edged out by higher-yielding cattle. Saved by the passion of a devoted circle of Emilian farmers, this living heritage of biodiversity, history, and rural culture was preserved.

Today, every wheel of Parmigiano Reggiano Vacche Rosse represents an authentic return to the source: a rare, slow-crafted cheese true to centuries of tradition.
